The Honey Garlic Carrots Your Kids Will Love
Vegetables are tricky business in my household. My toddler recently developed an aversion to anything green, quite literally taking the majority of vegetables off the table. It’s frustrating, to say the least, though I do my best to hide his veggies elsewhere, such as in spinach-banana pancakes or zucchini meatballs. And, thankfully, he absolutely loves fruit.
However, aside from sweet potato and avocado, I’m happy to report that these easy honey garlic carrots are the only other vegetables our picky little guy will happily eat on their own.
Whether or not you have a picky eater of your own, I’m willing to bet your family will enjoy this recipe.
1 package miniature carrots
2 tablespoons olive oil
3 tablespoons honey
2 cloves of garlic, minced (or 1 tablespoon of garlic powder)
Heat the olive oil in a saucepan over medium heat for 1 minute. Add the carrots and let them cook for a 5 minutes.
Add the honey and the garlic to the saucepan and stir well.
Reduce to low heat and cook until soft. Enjoy!
